This summer, walking in the vacant catfish restaurant Allen Sanders spent all his days renovating, you would find piles of plywood and construction tools lying all around what had the makings of a down home country dining hall. Now, take a look at their Facebook photos to see all the progress Sanders has made. As veterans to the culinary business, Sanders and his partner are excited about their newest endeavor into the fat city Oxford dining scene, surprisingly bland in the quality beef category.

Sanders intends to spend as much time and attention on his entrées as he has on renovations. He has it down to a science, where beef is hand-cut in house, and dry-aged for twenty-two days before being cooked and served to customers. Sanders claims “beef this good does not need much preparation or toppings after that, except a little salt and pepper.” He wants his patrons to know they are getting exactly what they paid for, and that’s a quality meal in a comfortable Delta atmosphere.

The comfortable atmosphere is important to Sanders, as he encourages patrons to drive to the restaurant for dinner, and stay for the rest of the evening. The serving staff is trained to keep from pushing people out the door, inviting them to stay as long as they please.

The authenticity transends the meats and service. Sanders’ brother is a mixologist whose New York City bar, Evelyn, was voted the “Best Cocktail Bar in the City”. He came in town to train the bar staff, even sharing the secret recipes to a few of his signature drinks. Don’t be surprised if the bartenders know your name and what you drink after a few visits,  because guests should feel at home when they visit the full bar at Delta Steak Company. Sanders anticipates hosting Delta Blues musicians for nightly entertainment to keep his guests coming back for a time well spent.

Sanders’s steaks are no strangers to Oxfordian taste buds. You might have snagged a bite or two off his plates at Olivia’s Corner Market in recent years, or at Castle Hill on Highway 6. Many of the followers Saunders developed at other restaurants have been chomping at the bit for the Delta Steak Company to get up and running.

Sanders keeps it simple, limiting his menu to ten items or less. Along with four different cuts of beef, Sanders will be serving farm-raised Mississippi catfish, and a few other local favorites. Produce comes from local farms, mostly from Yocona and Woodson Ridge. Sanders is a big believer in providing quality ingredients to his customers, and luckily the quality he needs is not far away.

To keep up with Sanders and the Delta Steak Company, visit their Facebook page, or give them a call at (662)-234-0130 for reservations. The restaurant address is at 1007 College Hill Road.

Delta Steak Company will have a ribbon cutting Friday, November 1st and 3:30 and will be open for dinner at 4:00. Saturday night, live music will be provided by the band Hogwash.
