UM Recipes: How to Make the Perfect Cranberry Sauce (with Video)

The University of Mississippi’s Department of Nutrition and Hospitality Management has been educating students about food science and cooking for more than 100 years. In this holiday video series, faculty members share some of the season’s best recipes.
Native Americans had the right name for the cranberry. “They called it bitter berry, because it is not sweet at all,” said Dave Holben, a professor with the University of Mississippi’s Department of Nutrition and Hospitality Management. 
But what holiday table is complete without cranberry sauce? In this video, Holben demonstrates how to make his favorite classic cranberry sauce recipe, developed for Cooking Light magazine by his friend, registered dietician Maureen Callahan. Holben also shares a brief history of the cranberry and how it ended up on holiday tables across the country.
