Cocktail Hour: Shake, Strain, Enjoy with a Mojito

As the first week of class continues, students are now feeling the overwhelming pressure of syllabus week.
Not to fret — HottyToddy.com has the perfect cocktail to take the edge off the blistering week of school. The weather is still warm, which we believe makes a mojito the perfect late summer cocktail.
Ingredients
-Ice
-6 ounces light rum
-12 mint sprigs, or spearmint, 8 roughly broken apart
-6 tablespoons fresh lime juice
-4 tablespoons sugar
– Splash of club soda
-4 slices lime
Place mint, limes and sugar into a beverage shaker. Muddle these three ingredients until the mint and lime wedges are broken down and mixed with the sugar. Add in your choice of rum, lime juice and club soda. Shake until all ingredients are thoroughly mixed.
Strain the contents over a highball glass filled with fresh ice. Add a lime wedge to the rim to finish it off.
