Cooking with Kimme: Fruit Pizza

1 package prepared sugar cookie dough
1 (8 ounce) cream cheese, softened
½ cup powdered sugar
1 teaspoon vanilla
About 4 cups fruit of choice – I have used strawberries, kiwi, mandarin oranges and blueberries (raspberries, blackberries, mango)

Preheat oven to 375.
Arrange cookie dough on a round pizza pan about ¼” thick (or large nonstick cookie sheet). Bake 10-12 minutes until the edges are barely browned. Set aside to cool.
Beat cream cheese, sugar and vanilla until combined. Spread cream cheese mixture on a baked cookie and arrange fruit of your choice on top.
