Cheers to SUMMER and the BEST Blackberry Cobbler! This crumbly sweet topping is sure to make all your summer-fresh-fruit-berry dreams come true! Substitute with your favorite fruit or make mine with fresh blackberries!

Blackberry Cobbler
4 cups blackberries
1 tablespoon lemon juice
2 eggs
1 ¼ cup sugar
1 ¼ cup all-purpose flour
6 tablespoons butter, melted

Preheat oven to 375 degrees.
Lightly grease a deep baking dish.
Distribute the blackberries in the bottom of the dish and sprinkle with lemon juice.
In a mixing bowl, stir together eggs, sugar and flour (the mixture will be coarse).
Sprinkle over blackberries. Drizzle melted butter over the top.
Bake for 20 minutes at 375 degrees, until lightly browned and bubbly. Low-broil for 2-3 minutes to crisp the crust.
Let stand 10 minutes.
Serve with vanilla ice cream.
