Cooking with Kimme: S'mores Tarlets
It’s graduation season, and we know that means party time! These fun (and cute!) S’mores Tartlets are the perfect treat to bring along in celebration of our GRADS!! Best served warm but certainly delicious at room temp!
(one package of graham crackers makes 18 tartlets)
Crust:
6 tablespoons butter, melted
1⁄4 cup sugar
18 squares (1 package) graham crackers, finely crushed
Filling:
1⁄2 cup sugar
1 egg
1/3 cup flour
1⁄4 cup cocoa powder
4 tablespoons butter, melted
10 large marshmallows, cut in 1⁄2
Preheat oven 325 degrees.
Melt 6 tablespoons of butter, add 1⁄4 cup sugar and stir in graham cracker crumbs.
Spray mini-muffin tin with cooking spray. Press crumbs using the back of spoon into the muffin tins making a ‘cup’ shape. Bake for 5 minutes until set. Let cool completely.
Combine 1⁄2 cup sugar with 1 egg. Beat for about 2 minutes until thickened and a pale yellow.
Whisk together flour and cocoa, then add 4 tablespoons melted butter. Using a spoon, fill the cooled tarts with chocolate filling. Bake 15 minutes until slightly ‘puffed.’
Cool completely on a wire rack. Gently remove tarts with a knife.
Cut marshmallows in half and top each tart with one cut side down.
Broil for 30 seconds or until lightly toasted.

Cultural Arts Center in Ocean Springs, allows her to further her training as an instructor that began at Viking Cooking School in Greenwood, where her and her family used to reside.
