No Time 2 Cook Recipe of the Week: Lemon Garlic Asparagus
The groundhog saw his shadow, so you have six more weeks of winter’s comfort food. This also means you have six more weeks to work on your healthy New Year’s Resolutions before warm weather arrives! Think positive with me! Asparagus is a go-to vegetable that I always keep on hand for a quick, healthy side dish. Ingredients
1 T. Olive oil
1 T. Butter
2 Cloves Garlic, minced
1 lemon
1 bag frozen asparagus
Fresh Parmesan (Optional)
Instructions
For fresh asparagus, use blanching method: bring a pot of water to boil, toss in asparagus, let water return to boil and then remove from heat. OR prepare frozen asparagus according to package directions.
While asparagus is cooking, heat olive oil and butter in a non-stick skillet. Saute garlic for about 1 minute. Add cooked asparagus and toss in garlic sauce. Salt and pepper to taste. Add juice from ½ a lemon and toss. Add fresh Parmesan if desired and garnish with slices from other ½ of the lemon. Serve immediately.
