UM Recipes: A Chocolate Chip Pie Fit for a Queen (and John Elway)
The University of Mississippi’s Department of Nutrition and Hospitality Management has been educating students about food science and cooking for more than 100 years. In this holiday video series, faculty members share some of the season’s best recipes.
From Ole Miss to the Denver Broncos all the way to Buckingham Palace, this recipe for a chocolate chip pie has some pretty famous fans.
Mark Davis, the first male graduate of Ole Miss’ Department of Nutrition and Hospitality Management, developed the recipe and took it with him when he got a job with the Broncos.
“John Elway loved this pie so much that he never refused an autograph request from Mark. Every year when Mr. Elway got to training camp, he would find one of these pies in his locker,” said Kathy Knight, an associate professor of nutrition and hospitality management.
Davis later shared the recipe with a hotel chef in London, who was so impressed that he passed it on to the head chef at Buckingham Palace, where it was served to Queen Elizabeth and the royal family.
To kick off this new video series, Knight tells the story and offers up the famous chocolate chip pie recipe, which is featured in the department’s cookbook, “Are You Ready? 100 Years of Friends, Family, and Food,” available for purchase online.
The Department of Nutrition and Hospitality Management offers undergraduate and graduate programs, including the B.S. in Dietetics and Nutrition, B.S. in Hospitality Management, M.S. in Food and Nutrition Services and Ph.D. in Nutrition and Hospitality Management. The department will begin offering an online M.S. in Hospitality Management in the 2018-19 academic year.
